Mojito Recipe
The mojito is Cuba's famous highball: fresh mint, lime and white rum, lengthened with soda water. It's light, minty and made for a hot St. Albert afternoon.

Ingredients
- 8–10 fresh mint leaves, plus a sprig to garnish
- ½ lime, cut into wedges
- 2 tsp (10 ml) sugar or ¾ oz (22 ml) simple syrup
- 1½ oz (45 ml) white rum
- Crushed ice
- Soda water, to top
Method
- Gently press the mint leaves, lime wedges and sugar in a tall glass with a muddler or the back of a spoon. Bruise the mint; don't shred it.
- Fill the glass with crushed ice.
- Add the rum and stir to mix.
- Top with soda water and give it one more gentle stir.
- Garnish with a mint sprig.
Tips & variations
- Clap the mint sprig between your hands before garnishing to wake up its aroma.
- Over-muddled mint turns bitter. Press gently.
- For a Nojito, leave out the rum and add more soda. It's a great alcohol-free drink for drivers.
